Simple Gluten Free Turkey Meatballs


My kitchen smelled like the basement of a Lutheran church. In a good way.

Gluten is everywhere, man. It’s almost impossible to find really good gluten free turkey meatballs in the grocery store. Scratch that: it’s totally frickin’ impossible. Luckily, these are super simple to make, and are juicy and tender. This is just a basic recipe. Don’t like all the seasonings? Replace them with something you like and let me know how it goes!

1 medium yellow onion, grated 

4 minced garlic cloves

1/2 cup gluten free dried bread crumbs

3 T ketchup

1/2 cup chopped fresh Italian parsley leaves

2 T fresh chopped thyme

2 T fresh chopped oregano

1 T fresh chopped basil

1 T fresh chopped rosemary

1/2 cup grated Parmesan cheese

1 large egg

1 t salt + salt to taste 

1/4 t ground black pepper

1 pound ground turkey

1/4 c olive oil

Grate the onion, squeeze out all of the extra liquid into paper towels, and put into a large mixing bowl. Add all of the ingredients except the turkey and olive oil, and blend together. Mix in the turkey, and shape the mixture into 1 inch balls. Lightly salt the outside of the meatballs. Heat the oil over medium high heat, and sauté the meatballs on all sides until browned. The meatballs should be cooked through within 5-7 minutes.
