Roasted Butternut Squash

Easy, easy, easy and also easy. And delicious.

  • 2 cups butternut squash, peeled and cubed
  • 2 T olive oil
  • 1 T maple syrup
  • salt to taste

Line a baking sheet with parchment paper, and pre heat the oven to 400.

In a large bowl, mix all ingredients. Stir until the squash is covered, and spoon onto the baking sheet. Roast for 25-30 minutes, or until the squash has browned. (I prefer mine caramelized and blackened. You can also turn the squash over after 15 minutes to avoid excessive browning on only one side.)
